All-Organic Vegan Bean and Rice Dish
Here’s a yummy bean and rice dish I made on the second day of being a vegan:
- Soak mixed beans for two hours (I got a bean soup mix from Whole Foods)
- Boil brown rice with raisins
- Boil the beans — with just enough water to make the beans soft, but not enough to turn this dish into a soup
- Chop fresh garlic
- Chop fresh cilantro
- Chop green tops of fresh beets
- Throw all ingredients, except rice, into a pot. Boil until the water is gone.
- Add rice with raisins.
- Add salt to taste.
- Enjoy!
