All-Organic Vegan Bean and Rice Dish

Here’s a yummy bean and rice dish I made on the second day of being a vegan:

  1. Soak mixed beans for two hours (I got a bean soup mix from Whole Foods)
  2. Boil brown rice with raisins
  3. Boil the beans — with just enough water to make the beans soft, but not enough to turn this dish into a soup
  4. Chop fresh garlic
  5. Chop fresh cilantro
  6. Chop green tops of fresh beets
  7. Throw all ingredients, except rice, into a pot.  Boil until the water is gone.
  8. Add rice with raisins.
  9. Add salt to taste.
  10. Enjoy!
